Vermont Maple Grades:
With today's high quality standards, the grade of maple syrup does not mean a difference in quality. The maple tree naturally produces a lighter colored maple syrup early in the season that gradually deepens in color and flavor strength toward the end of the season.
Fancy - the most delicate of maple flavors Medium Amber - a nice maple flavor for all uses Dark Amber - rich maple flavor B - bold maple flavor, best one to use for cooking and flavoring, but a great table syrup as well.
